Best Ever Banana Muffins


A freshly baked batch of muffins is always a nice treat! Especially on Saturdays when we have the luxury of being able to spend some extra time at home in the kitchen and some extra time to drink some coffee, read a magazine and have an overall relaxing day.


I have to admit this is the only Banana Muffin recipe that I have ever tried, but it is definitely a family favourite! I believe it originally came from my mom's home economics class when she was in high school...and she has been using it ever since!

Ripe bananas are something that I have in my house on a regular basis so I'd say I tend to make this recipe atleast once a month if not more. If you ever have 3 bananas lying around in your kitchen that are starting to get old and not so desirable anymore, then maybe these banana muffins would be a good place to start. If you find the basic recipe just a little bit incomplete you can always add some chocolate chips into the mixture to give it that little extra sweetness! Who doesn't love chocolate and banana together right?

So here is everything you'll need to get started...


3 Large ripe bananas 
3/4 cup sugar 
1 egg 
1/3 cup melted butter 
1 tsp baking soda 
1 tsp baking powder 
1/2 tsp salt 
1 1/2 cups flour
 First you start by mashing bananas in a medium size mixing bowl. Then add the sugar and lightly beaten egg. Add the melted butter and mix together with a spatula.

Add the baking soda, baking powder, salt, and flour to the mixture and stir until well blended.

Grease the muffin pan and then scoop the batter into the pan.

Bake at 375 degrees for 20 minutes.

Makes 12 muffins.

These muffins store quite well and they will stay moist and fresh in a tupperware container if you're not planning on eating them all at once. Hope you guys love this recipe as much as I do! Happy baking everybody!
